These yummy muffins are made with whole wheat flour and lots of fresh blueberries. My husband says they´re the best muffins he has ever had. Give them a try and let me know if you agree.
- 2 eggs
- ½ cup almond milk
- ½ cup agave nectar
- 1 tsp. Vanilla extract
- ¼ cup melted butter
- 1 cup whole wheat flour
- ½ cup white flour
- 2 tsp . baking powder
- 1 pinch of salt
- 2 cups blueberries
- 1. Preheat the oven to 375 ° F.
- 2. In a large mixing bowl mix eggs, milk, agave nectar, vanilla extract and melted butter together until smooth. add the flours, baking powder and salt and stir until well combined.
- 3. Gently stir the blueberries into the batter and pour the mixture into muffins tins.
- 4. Bake for 20-25 minutes approximate. Remove from the oven and allow to cool.
