Healthy Bites


These pecan apricot energy bites are a delicious snack to grab when you’re on the go. I loved the combination of apricots, pecan and maple. But you can use any dried fruit or nut for these recipe. I think another great combination will also be apricot with almonds and coconut.
I used to only follow the recipes exactly as they were but once you try experimenting you will see you can come up with your own combinations that are sometimes even better than the original recipe. I invite you to experiment and see what you come up with!

Ingredients:

  • ½ cup pecans
  • ½ oat flour
  • 8-10 dried apricots
  • 2 tbsp. maple syrup

Directions:

  • 1. In a food processor, combine all the ingredients and chop them until a paste is formed.
  • 2. Line a small loaf tin with baking paper.
  • 3. Spoon mixture in and press firmly down.
  • 4. Refrigerate for 1 hour.
  • 5. Remove from tin. Slice into 12 bar shapes and then into pieces.
