Chocolate Chia seed pudding


I love chia seeds and use them all the time. I also really encourage my clients to add them to their diets since they are mini powerhouses packed with calcium, antioxidants and Omega-3.

A lot of people don’t like them because of their texture, but trust me, you get used to it. They are really versatile since you can add them to your smoothies, use them to thicken desserts, etc.

One of the ways I enjoy having them is as a pudding either for breakfast or as a delicious healthy dessert after dinner. There are plenty of ways you can prepare your pudding. I am just sharing my favorite one, but don’t be scared to mix it up and try different variations.

Ingredients:

  • ½ cup chia seeds
  • 2 cups coconut milk
  • 1 scoop vegan chocolate protein
  • Stevia or honey to taste

Directions:

  • 1. Add all ingredients except sweetener to a mixing bowl and whisk vigorously to combine. Sweeten to taste.
  • 2. Let it rest covered in the fridge overnight or at least 3-5 hours (or until it's achieved a pudding-like consistency).
  • 3. Serve chilled with desired toppings, such as fruit, dried coconut or granola.
