Healthy Kale Caesar salad

As you probably know, a Caesar salad isn´t exactly the healthiest choice. Egg yolk, oil, croutons, and a good amount of parmesan cheese can make for a really tasty salad… but not healthy one. It is high on fat and most of the dressing lacks quality in its ingredients. Next time, instead of spending your money on a low quality Caesar dressing, try making it yourself.

For this recipe we will use Kale instead of romaine lettuce. The key for the recipe is to really massage the kale, which will make it tenderer and easier to digest.
Instead of the croutons and parmesan cheese we will use sliced almonds and cranberries.

Trust me, this is way yummier than the original version.


  • 2 cups kale stems removed
  • 2 tbsp. cranberries
  • 2 tbsp. shaved almonds


  • ½ cup cashews
  • ½ cup water
  • 2 tbsp. nutritional yeast
  • Juice of 1 lemon
  • Sea salt


  • 1. For the dressing: add all ingredients to a blender and blend until creamy.
  • 2. When your dressing is ready, cut the kale and place it on a bowl.
  • 3. Add dressing and use your hands to massage the kale. This will allow the way to soften.
  • 4. Let stand for a few minutes and then add your almonds and cranberries.
