Chocolate Coconut Protein Balls


We have been living in Miami now for almost a year, which means that by now we have pretty much the same routine every week, at least when it comes to mornings.
We usually go to the gym three days a week and swim or run the other two days. Since we have to wake up really early, I usually prepare something we can grab really fast in the morning before our workout.

I would never recommend you working out without eating something because you would be defeating the purpose of your workout.
When you don´t eat something, especially when you have been fasting all night, your body will use your muscles for energy and when you finally decided to eat, your body will store everything because it thinks you are in starvation mode.

I love these chocolate coconut protein balls because they offer a satiating combination of protein, carbs and fats, making them perfect as a pre or post workout snack.


Ingredients:

  • 1 cup raw walnuts
  • 1 cup dry coconut + ¼ cup to roll the balls
  • 1 scoop vanilla protein
  • 6-8 dates
  • 1 tbsp. vanilla extract
  • 1tbsp. cacao
  • 1 tbsp. maple syrup

Directions:

  • 1. Place the walnuts and coconut in a food processor a mix until finely grounded.
  • 2. Add the rest of the ingredients and process again until everything starts sticking together.
  • 3. Roll the mixture into 1.5 balls and roll each ball over shredded coconut to coat. Leave in the fridge for a few hours before eating.
