Mini Fruit Tart Cheesecake

I absolutely love cheesecake. But let’s be honest, it is not really common to find a healthy version of the typical cheesecake. That is why I will only have it on special occasions.

Most of the desserts I have shared on my blog involved chocolate so that is why I decided to share something different that I like as much as chocolate. Well, not really as much since I don’t think there is anything that can beat chocolate, but almost as good.


  • 2 cups almond meal
  • ½ cup of dates
  • 1 tsp salt


  • 1 ½ cup raw cashews
  • ¼ cup lemon juice
  • ¼ cup coconut oil
  • ½ cup maple syrup


For the base:

  • 1. Put all the ingredients in a food processor and process until the mixture breaks down into coarse crumbs and begins to stick together.
  • 2. Press the mixture down into a pan to form the crust then place the crust in the freezer while you prepare your filling.

For the filling:

  • 1. Place all filling ingredients in a good blender and blend until mixture is smooth.
  • 2. Finally pour the mixture into the cooled tart crust and place in the fridge for 2 hours. Enjoy!
