Granola Raisin Cookies

The past couple of months have been a little crazy for us. We have been working day and night in our new project, which is close to completion (stay tuned), so I haven’t had a chance to spend a lot of time in my kitchen as I usually do.

So this past weekend I decided to just to stay home and spend some time cooking and trying out new recipes. God! I really missed spending time in my kitchen. For me, cooking is the best type of therapy.

Below you can find my favorite recipe of the weekend. These granola raisin cookies are similar to oatmeal raisin cookies, but in my opinion a little bit better because the granola gives them a crunchier texture and more sweetness.

  • 1 cup granola
  • ½ cup whole wheat flour
  • 1 tsp baking powder
  • 1 tsp. cinnamon
  • pinch of salt
  • 2 tbsp. coconut oil
  • 1 egg
  • 1 tsp. vanilla extract
  • ¼ cup agave
  • ¼ cup raisins


  • 1. Whisk together the granola, flour, baking powder, cinnamon, and salt in a medium bowl. In a separate bowl, whisk together the coconut oil, egg, and vanilla. Stir in the agave. Add in the flour mixture, stirring just until incorporated. Fold in the raisins. Chill the cookie dough for 30 minutes.
  • 2. Preheat the oven to 325°F, and line a baking sheet with parchment paper.
  • 3. Drop the cookie dough into 15 rounded scoops onto the prepared sheet, and flatten slightly. Bake at 325°F for 11-14 minutes. Allow them to cool before you eat them.
