Oatmeal Cacao nibs cookies

Mmmm… Did someone say oatmeal cacao nib cookies?

These oatmeal cacao nib cookies are exactly what you crave when you want to satisfy that sweet tooth. Even if you are not a health fanatic I guarantee that you are going to love these cookies. And the best thing is you don’t need a lot of ingredients or a lot of time to prepare them.

You will basically need oatmeal of course, cashews, almond butter, maple syrup, vanilla extract and cacao nibs.

If you haven’t heard of cacao nibs they are coarsely ground cocoa beans. I think they taste like a mix between roasted coffee beans and dark chocolate.  They’re crunchy and full of nutrients. Just writing about them makes my mouth melt. I hope you enjoy them!


  • 1 cup of rolled oats
  • 1 cup of cashews
  • ¼ cup almond butter
  • ¼ cup maple syrup
  • ½ teaspoon vanilla extract
  • pinch of salt
  • 2 tablespoons cacao nibs


  • 1. Place the oats and cashews into a food processor. Pulse several times until you have a fine crumbly mixture.
  • 2. Then add the almond butter, maple syrup, vanilla and salt and pulse until you have a dough.
  • 3. Remove the mixture from the food processor and place into a mixture bowl. Stir in the cacao nibs.
  • 4. Using an ice cream scoop cookie dough onto parchment lined cookie sheet.
  • 5. Place the cookies in the freezer for 10 minutes before eating so they have a chance to firm up.
