Summer Pasta

This is one of my favorite summer dishes. It is super simple to make and you can bring it to any barbecue or picnic and amaze your guests.

I use arugula but you can also use spinach if you don’t love arugula. i.e my husband…

  • 14 ounces uncooked rotini pasta
  • ½ cup yellow corn
  • ½ cup green beans
  • 1 cup arugula
  • ½ cup feta cheese


  • 1. Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the rotini, and return to a boil. Cook uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain and cool by running cold water over the pasta in a colander set in the sink.
  • 2. Combine cooked and cooled pasta with corn, green beans, arugula and feta cheese in a large bowl. Pour a little bit of olive oil over the salad and stir to combine. Add salt and pepper to taste.
  • 3. Cover and refrigerate before serving.
