Apple Cinnamon Healthy Muffins


Who says muffins can’t be healthy. This easy Apple Cinnamon Muffin recipe contains no sugar and no flour. They are sweetened with apple sauce and taste amazing!
Now that I am back working it has turn into our grab 'n go breakfast since are mornings are a little bit more chaotic, especially with the baby.

My husband also likes to take one as a mid-morning snack to keep his energy levels up and since they are made with oats and have no sugar they will keep your blood sugar level steady plus the complex carbohydrate provides energy for the brain and body.

Ingredients:
1⁄2 cup unsweetened applesauce
1⁄2 cup almond butter
2 large eggs
2 tbsp. coconut oil, room temperature
1 cup almond milk
2 tsp. vanilla extract
2 1⁄2 cups old fashioned rolled oats
2 tbsp. cinnamon
2 tsp. baking powder
1/2 tsp. salt
1 1/2 cups peeled and diced apples

Directions:

1.Preheat oven to 400F degrees and line standard muffin pan with paper liners and set aside.
2. In a large bowl, add the brown sugar, apple sauce, eggs, and melted coconut oil. Whisk until smooth. Add the milk, almond butter and vanilla. Whisk until smooth.
3. Add the oats, cinnamon, baking powder, and salt to the wet ingredients. Stir until well combined. Add the diced apples. Stir to combine.
4. Fill the muffin cups. Bake for 30 minutes. Allow to cool and enjoy!
